The philosophy behind Na's cooking is creating meals to make eating a pleasure, by planning menus that taste fabulous and suit the occasion, as well as making cooking a pleasure, by keeping the recipes simple to prepare and interesting to cook.
Using the freshest local ingredients, making the most of the different seasons such as fish and game from norfolk, fruit, vegetables and herbs from the walled garden as available, dishes are as fresh and tasty as possible. Eggs are from Na's happy, lazy hens who live at the bottom of the garden.
The recipes are designed to be easy to cook, and for either the whole dish, or its key components, to be prepared ahead where possible. Many of the dishes are 'convertibles', so that they make a light lunch or starter, and easily convert into a filling family supper or dinner party dish.
